  1. Wash split bengal gram for 2-3 times then soak dal in water for half an hour
  2. Sieve 1/2 cup all purpose flour 1/2 cup wheat flour
  3. Add pinch of salt & 4-5 tbsp oil for moyan
  4. 1/2 tbsp baking powder (secret ingredient)
  5. Add water little by little and knead very soft dough
  6. Knead again by adding more oil
  7. Keep it covered for sometime
  8. Now transfer soaked dal into pressure cooker add 1- 1/2 cup water
  9. Add grated nutmeg powder
  10. Cook till 3 whistle
  11. After pressure subsides mash dal with masher or you can grind it too
  12. Add jaggery powder, sugar, cardamom powder & soaked saffron strands
  13. Mix it well and cook on low flame
  14. Keep stirring it between
  15. Cook till semisolid (bound) consistency
  16. Sieve through puran machine
  17. Transfer the puran to a plate & allow it to cool completely
  18. This water is used to prepare 'katachi aamti'
  19. Make big sized puran balls
  20. You will get 10-12 puran polis from 250 gm bengal gram puran
  21. 2nd important point...for dusting use rice flour
  22. Take a very small portion of dough
  23. Roll it little woth hands
  24. Put puran ball into it
  25. Seal it
  26. Dust it with some rice flour or all purpose flour
  27. Roll a thin poli
  28. On a warm skillet shalow fry it with some clarified butter from both sides till it gets golden brown on a low flame
  29. You can spread ghee on a poli wihile it on a pan or you can spread after serving it in a plate
  30. Puran poli is ready! Serve it with ghee or milk
